14 Hills is the latest City restaurant in the D&D London portfolio which opened in November 2019. Leading the kitchen is Executive Head Chef, Thomas Piat, formerly Executive Chef at Daniel Boulud’s, Bar Boulud. It will mark a return to London for the chef, who most recently worked in Paris, overseeing the launch of Hélène Darroze’s latest opening, JOíA.
Thomas Piat’s menu will focus on modern British cooking with a touch of French flair influenced from his home country. Signature dishes include sharers for two people like 42 day dry-aged Côte de boeuf, Pork chop with baked apple, wholegrain mustard mousseline and cider jus and a seafood starter of Dressed white crab, grapefruit, chilli, radish and coriander. Classic dishes such as Game Pâté en Croûte, Truffle with a 63-degree rare breed cooked egg and Rossini also feature, as well as dedicated grill menu of Aberdeen Angus Ribeye and Dover Sole served on the bone with a selection of sauces to match.
